Step 1: The Winter Harvest: Collecting and Storing the Snow



Contrary to what one might think, the journey of Snow Sherbet begins not in summer, but during the harshest times of winter.
  • Choosing the Right Snow: The highlanders select clean masses of snow, usually accumulated on the high, north-facing, and shaded slopes of the mountains. It is crucial that the snow is pure, untouched by animals, and cleansed by the wind.

  • Snow Wells (The Ancient Refrigerators): After being collected, the snow is stored in special pits called "kar kuyusu" or "karlık". These wells are created by digging 1-2 meters into the ground.
